Coconut Chocolate Chip Scones



As much as I love starting my day with fresh fruit and a bowl of hearty oatmeal sometimes my sweet tooth prevails and I just have to go for some scones. Overall the sugar content isn't too high on this one though and it makes for a filling breakfast, dessert or just midday sweet snack.

Coconut Chocolate Chip Scones

Ingredients:
2 cups of flour
3 teaspoons of baking powder
1 tablespoon of sugar
1/4 teaspoon of salt
Dash of cinnamon
1/4 cup of oil (or vegan butter)
3/4 cup of soymilk (or any nondairy milk)
1/2 cup of shredded coconut
1/3 cup of chocolate chips
optional drop of almond or vanilla extract

Preheat oven to 400 degrees. Mix dry ingredients and then add wet. Combine coconut and chocolate chips and then using your hands or a spoon (I find just using floured hands works best) work into small to medium slightly flattened balls. You can also shape them into triangles in your hand as well. Bake for 12-14 minutes until the bottoms are slightly browned and the scone seems to be cooked through.



Enjoy! This recipe makes about 8 small scones. I like to eat them right out of the oven with a little jam and vegan butter spread on them.
