Basil Tomato Potato Snacks

Hi everyone and welcome to my first post on my new food blog! This is just a nice and easy recipe for a nice snack with a lot of flavour. Hope you all enjoy!


2 Potatoes (russet baking potatoes work best)
9-10 Basil Leaves
1 Large Tomato
Olive Oil
Baslamic Vinegar
Salt and Pepper to Taste

First you'll want to preheat your oven to 400.
Next rinse your potatoes very well and slice them length wise into 1/4 in wide pieces.
(This should yeild about five pieces each depending on the size of your potato)
Place your potato slices on a baking sheet and drizzle lightly with a bit of olive oil.
Bake for 30-45 minutes or until your potato slices are nice and tender but with a bit of a crispy exterior.
Place a basil leave over each potato slice and then top that with a slice of tomato.
Add salt and pepper to taste and finish of with a bit of Balsamic vinegar.

And there you go! Super simple and tasty snack for anytime of the day~
