Cheezy Tofu Scramble and Sausage Breakfast Sandwiches



Breakfast might be my favourite meal of the day and when it comes to savory breakfasts nothing beats tofu scramble. Even better is making a tasty breakfast sandwich out of it. Today I present you with a tofu scramble sausage muffin sandwich! I like to make a big batch the night before and then I have breakfast for the next few days!

Cheezy Tofu Scramble

Ingredients:
1 block of firm tofu
2 small bell peppers (I used red and yellow but any will do)
1/2 of a small onion
2 cloves of garlic
1 tablespoon of apple cider vinegar
1 teaspoon of black salt (pink in colour)*
1/2 teaspoon of cumin
1/2 teaspoon of turmeric
Black pepper to taste
Optional: 1/4 cup of Daiya pepper jack shreds or you can use nutritional yeast instead

*If you don't have access to black salt (can be found in most Indian markets) regular salt will work just as well

Add a little oil or vegan butter to a heated pan and saute onion and peppers for a few minutes. Add tofu and continue to cook on medium heat until tofu browns up a bit. Add garlic and other spices and cook for a few more minutes. In the last minute add the apple cider vinegar and then turn off heat. Add the cheese, if using, and fold into scramble so that it lightly melts.


Maple Sausage Patties

Ingredients:
1 package of Gimme Lean Ground Sausage (comes in a tube)
2 tablespoons of minced onion
3 tablespoons of maple syrup

Combine ground sausage with minced onion and then shape into 10 patties. Pan sear on a lightly oiled pan on medium heat until golden brown and then in the last minute add the maple syrup. Allow to cool slightly and enjoy!



Toast up some english muffins, bagels or toast, spread vegan butter and construct your breakfast sandwich! Serves 10 or feeds you and a loved one breakfast for a week~
